INGREDIENTS
Cake Base
- 2kg Ultra Rich Vanilla Creme Cake Mix
- 0.7kg Whole Eggs
- 0.6kg Oil
- 0.45kg Water
- 0.4kg IQF Blueberries
Crumble
- 0.4kg Ultra Rich Vanilla Creme Cake Mix
- 0.6kg Bread Flour
- 0.4kg Butter
METHOD
Crumble
- Add all the ingredients together to make a crumble.
Muffin Base
- Add eggs to the bowl, then add the Ultra Rich Vanilla Creme Cake Mix, mix for 1 minute at low speed, then continue mixing for 3 minutes at medium speed.
- Add water and oil slowly for 1 minute at low speed. Scrap down the bowl, continue mixing for 3 minutes at low speed.
- Fold in the frozen Blueberries and pipe into muffin cups. Add the crumble on top of the muffins.
- Bake at 180°C 25 to 30 minutes.
