Felchlin Edelweiss 36% is a balanced, white couverture with a pleasant whole milk note. The intensive processing in the conch reveals a delicate cream caramel flavour which is rounded with a subtle vanilla taste. This chocolate is great for coating of pralines, cookies, petits fours and cakes and for molding (must be tempered), ganache, chocolate mousse and sauces. You can melt the chocolate carefully by either: (i) a water bath, (ii), warming cabinet with a temperature control or (iii) in a microwave.Â
