The distinct flavour of PDO-certified Lescure butters are produced by using cream exclusively from the Poitou-Charentes region which benefits from high levels of sunshine and regular rainfall.
Lescure Pastry Butter with 84% fat content has a higher plasticity and comes in a sheet form, making it perfect for dough lamination, yielding crisp and flakey puff pastry. Lescure butters are cultured with lactic ferments prior to slow churning which results in a creamy and hazelnut flavour.
